Ingredients
- 2 bs. Brisket or flank steak
- Salt and pepper
- 1 large onion, finely chopped
- 3 cloves garlic, minced
- 1 jar roasted red peppers, drained
- 2 large carrots, peeled and chunked
- 8oz button mushrooms, quartered
- 2 tsp smoked Spanish paprika
- 1 cup red wine
- 28oz can tomatoes in pure
- 3 tbsp tomato paste
- 2 bay leaves
- 6 springs thyme
- 1 cup Greek yogurt
Instructions
- Preheat oven to 135C/275F.
- Season beef and heat oil in large Dutch oven. Brown beef on all sides, 4-5 minutes each.
- Reduce heat to medium and cook onion and garlic until softened, 7 minutes.
- Add remaining ingredients and bring to a simmer.
- Return beef and juices to pot. Cover and transfer to oven.
- Bake for 4 hours.
- Remove meat and boil down the sauce, roughly 5 minutes.
- Serve with yogurt.
