I make it with Santa Rosa plums when they’re in season for the two weeks in the summer.
Ingredients
- 7 oz sugar
- 4 eggs
- 1 1/3 cups flour (1/3 flour, 1/3 potato flour, 1/3 cornstarch)
- 1 tbsp. baking powder
- 10 plums or peaches or apricots
- 1 stick of butter
Instructions
- Beat butter and sugar until fluffy. Add eggs one at a time. Slowly add flour and baking powder.
- Preheat oven to 350F.
- Spray a 9″ round or 8″ square cake pan.
- Pour in the batter.
- Cut the fruit in half and place in the batter, round-side up.
- Bake for 40-45 minutes or until golden brown. The dough will rise around and often oven the fruit.
