My grandmother was an excellent cook. These were among my favorites when I was a kid (without the mushroom sauce of course)
INGREDIENTS
Meatballs:
- 1/2 large onion, chopped fine
- 1/2 cup panko breadcrumbs
- 1 lb. Good hamburger meat
- 1 small zucchini, grated
- 1 small carrot, grated
- 1 large egg
- 2 tsp. Worcestershire sauce
- Salt, pepper and paprika to taste
Sauce:
- 1 tbsp butter
- 1/2 onion, thinly sliced
- 1 garlic clove, minced
- 7 oz. Mushrooms
- 3 tbsp. Flour
- 2 cups beef broth (I use Knorr cubes)
- Salt, pepper
INSTRUCTIONS
- Mix all meatballs ingredients and form into balls.
- Flatten with the palm of your hands to improve browning.
- Sauté in olive oil until browned on both sides. Set aside.
- Melt butter and sauce the mushrooms and onions for 5 minutes til they soften and slightly browned.
- Sprinkle with flour and cook, stirring, for one minute.
- Mixture will be dry and appear sticky.
- Slowly add the beef broth stirring constantly until well mixed.
- Bring to a boil and cook to thicken slightly.
- Add the meatballs and cook over medium/low heat for 10 minutes.
