KETZITZOT (MEATBALLS IN MUSHROOM SAUCE)

My grandmother was an excellent cook. These were among my favorites when I was a kid (without the mushroom sauce of course)

INGREDIENTS

Meatballs:

  • 1/2 large onion, chopped fine
  • 1/2 cup panko breadcrumbs
  • 1 lb. Good hamburger meat
  • 1 small zucchini, grated
  • 1 small carrot, grated
  • 1 large egg
  • 2 tsp. Worcestershire sauce
  • Salt, pepper and paprika to taste

Sauce:

  • 1 tbsp butter
  • 1/2 onion, thinly sliced
  • 1 garlic clove, minced
  • 7 oz. Mushrooms
  • 3 tbsp. Flour
  • 2 cups beef broth (I use Knorr cubes)
  • Salt, pepper

INSTRUCTIONS

  1. Mix all meatballs ingredients and form into balls.
  2. Flatten with the palm of your hands to improve browning.
  3. Sauté in olive oil until browned on both sides. Set aside.
  4. Melt butter and sauce the mushrooms and onions for 5 minutes til they soften and slightly browned.
  5. Sprinkle with flour and cook, stirring, for one minute.
  6. Mixture will be dry and appear sticky.
  7. Slowly add the beef broth stirring constantly until well mixed.
  8. Bring to a boil and cook to thicken slightly.
  9. Add the meatballs and cook over medium/low heat for 10 minutes.
