I love this sweet, light German pancake. It’s easy to make and a perfect dessert. I serve it with cherry preserves (the one I like is from Stute in Italy – Morello cherry preserves – which I get on Amazon.


Ingredients

  • 3 eggs, separated
  • 3 tbsp sugar (1 oz)
  • 1/2 cup milk minus 2 tbsp
  • 3 tbsp flour
  • Butter for pan

Instructions

  1. Mix yolks with remaining ingredients well. Whip whites until stiff but not dry. Fold whites into the yolk mixture.
  2. Heat skillet (cast iron works well but non stick is fine too) on top of the stove.
  3. Add butter to coast the bottom.
  4. Pour in the mixture and lower the heat to medium.
  5. Cook 3-4 minutes.
  6. Break the pancake into pieces and turn them over.
  7. Cook for a couple more minutes until done.

Serve with powdered sugar and preserves. The traditional German preserves are plum (Povidel). You can also cook any stone fruit or berries and sugar on top of the stove for a perfect accompaniment.
