HEALTHY OAT JAM MUFFINS

Ingredients

  • 1 ½ cups cake flour
  • 1 cup oats, ground
  • ½ cup brown sugar
  • 1/3 cup honey
  • 2 tsp. baking powder
  • 1 large egg
  • 1 cup yogurt (I use fat free plan Greek yogurt)
  • ¼ cup canola oil
  • 1/3 cup your favorite preserves

Instructions

  1. Preheat oven to 400F, and spray a 12 cup muffin tin with Pam.
  2. Combine flour, ground oats, sugar and baking powder in a bowl and mix with a fork.
  3. In a separate bowl combine all the wet ingredients and the honey.
  4. Mix well, then pour into the dry ingredients.
  5. Mix only until combined (the mixture will be lumpy and wet).
  6. Pour the batter into the muffin cups until about half full.
  7. Spoon 1 tsp. preserves into each cup, then top off with batter.
  8. Bake for 15-18 minutes until springy to the touch. Cool off and eat. They’re best warm!
