GOULASH SOUP

INGREDIENTS

  • 1 kg beef cubes
  • 2 scant tsp salt
  • 1 tsp pepper
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 2 yellow and 2 yes peppers, seeded and chopped
  • 2 ripe tomatoes, chopped
  • 1 tbsp tomato paste
  • 1/4 cup sweet Hungarian paprika
  • 1 bay leaf
  • 2 cups beef stock
  • 4 carrots, peeled and chunked
  • 2 potatoes, peeled and chunked

INSTRUCTIONS

  1. Preheat oven to 350F.
  2. Brown onion in oil and butter until translucent and golden, 6 minutes. Season beef, then add to onions and cook 3 minutes. It won’t brown. That’s OK.
  3. Agg garlic, peppers and tomatoes.
  4. Cook for 3 minutes.
  5. Add paprika and tomato paste, then add beef stock.
  6. Bring to a simmer and cook, covered, 1.5 hours.
  7. Add potato’s and cook another hour.
