CHICKEN IN A POT

Omer Miller is an Israeli chef who cooks recipes that aren’t only delicious but specially designed for people who suffer from Crohn’s disease.

Ingredients

  • One chicken, quartered
  • Four potatoes, peeled and sliced
  • Four carrots, peeled and sliced
  • Four onions, peeled and sliced
  • Four garlic cloves, peeled and thinly sliced
  • Marinade:
  • 1 tbsp. Smoked paprika
  • 1 tbsp. Sweet paprika
  • 1 tsp. Cumin
  • 3 tbsp. Tomato paste
  • 2 tbsp. Soy sauce
  • 2 tbsp. Olive oil
  • 1 cup cold water
  • Salt and pepper

Instructions

  1. Preheat oven to 375F.
  2. Mix all marinade items and the chicken in 1/2 of the marinade for 2 hours or overnight.
  3. In a Dutch oven, sauté the onions until golden. Add the potatoes and carrots and sauté for 3-5 minutes. Mix with the marinade. Place the chicken on top of the vegetables and bake covered for 1 hour. Raise the heat to 450F and bake for another 20 minutes.
