Ingredients
- One chicken, quartered
- Four potatoes, peeled and sliced
- Four carrots, peeled and sliced
- Four onions, peeled and sliced
- Four garlic cloves, peeled and thinly sliced
- Marinade:
- 1 tbsp. Smoked paprika
- 1 tbsp. Sweet paprika
- 1 tsp. Cumin
- 3 tbsp. Tomato paste
- 2 tbsp. Soy sauce
- 2 tbsp. Olive oil
- 1 cup cold water
- Salt and pepper
Instructions
- Preheat oven to 375F.
- Mix all marinade items and the chicken in 1/2 of the marinade for 2 hours or overnight.
- In a Dutch oven, sauté the onions until golden. Add the potatoes and carrots and sauté for 3-5 minutes. Mix with the marinade. Place the chicken on top of the vegetables and bake covered for 1 hour. Raise the heat to 450F and bake for another 20 minutes.
