BEEF, ROOT VEGETABLE AND A LITTLE DATES STEW

INGREDIENTS

  • 2 lbs beef cubes
  • 3 tsp salt
  • Pepper to taste
  • 2 tbsp potato starch
  • 2 tbsp olive oil
  • 3 garlic cloves, whole
  • 3 tbsp tomato paste
  • 1 tsp paprika
  • 1 cup white wine
  • 3 cups beef stock
  • 6 thyme sprigs
  • 2 lbs peeled and cubed beets, carrots, potatoes
  • 6 medjool dates, pitted but left whole

INSTRUCTIONS

  1. Place salt, pepper and corn or potato starch in bag. Toss beef to coat well.
  2. Brown beef in oil on all sides, 8 minutes. Remove. Add onions and cook 7 minutes. Add tomato paste and paprika and cook for a few minutes. Add wine, bring to a boil and cook 2-3 minutes until the wine is mostly evaporated.
  3. Return the meet to the pot plus 2.5 cups broth and thyme. Bring to a simmer and cook 1.5 hours.
  4. Add the vegetables and dates plus one more cup broth if needed; cook for another 1.5 hours.
