INGREDIENTS
- 2 lbs beef cubes
- 3 tsp salt
- Pepper to taste
- 2 tbsp potato starch
- 2 tbsp olive oil
- 3 garlic cloves, whole
- 3 tbsp tomato paste
- 1 tsp paprika
- 1 cup white wine
- 3 cups beef stock
- 6 thyme sprigs
- 2 lbs peeled and cubed beets, carrots, potatoes
- 6 medjool dates, pitted but left whole
INSTRUCTIONS
- Place salt, pepper and corn or potato starch in bag. Toss beef to coat well.
- Brown beef in oil on all sides, 8 minutes. Remove. Add onions and cook 7 minutes. Add tomato paste and paprika and cook for a few minutes. Add wine, bring to a boil and cook 2-3 minutes until the wine is mostly evaporated.
- Return the meet to the pot plus 2.5 cups broth and thyme. Bring to a simmer and cook 1.5 hours.
- Add the vegetables and dates plus one more cup broth if needed; cook for another 1.5 hours.
