Ingredients
- 1 ½ cups cake flour
- 1 cup oats, ground
- ½ cup brown sugar
- 1/3 cup honey
- 2 tsp. baking powder
- 1 large egg
- 1 cup yogurt (I use fat free plan Greek yogurt)
- ¼ cup canola oil
- 1/3 cup your favorite preserves
Instructions
- Preheat oven to 400F, and spray a 12 cup muffin tin with Pam.
- Combine flour, ground oats, sugar and baking powder in a bowl and mix with a fork.
- In a separate bowl combine all the wet ingredients and the honey.
- Mix well, then pour into the dry ingredients.
- Mix only until combined (the mixture will be lumpy and wet).
- Pour the batter into the muffin cups until about half full.
- Spoon 1 tsp. preserves into each cup, then top off with batter.
- Bake for 15-18 minutes until springy to the touch. Cool off and eat. They’re best warm!
