SPANISH BEEF STEW

Ingredients

  • 2 bs. Brisket or flank steak
  • Salt and pepper
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 jar roasted red peppers, drained
  • 2 large carrots, peeled and chunked
  • 8oz button mushrooms, quartered
  • 2 tsp smoked Spanish paprika
  • 1 cup red wine
  • 28oz can tomatoes in pure
  • 3 tbsp tomato paste
  • 2 bay leaves
  • 6 springs thyme
  • 1 cup Greek yogurt

Instructions

  1. Preheat oven to 135C/275F.
  2. Season beef and heat oil in large Dutch oven. Brown beef on all sides, 4-5 minutes each.
  3. Reduce heat to medium and cook onion and garlic until softened, 7 minutes.
  4. Add remaining ingredients and bring to a simmer.
  5. Return beef and juices to pot. Cover and transfer to oven.
  6. Bake for 4 hours.
  7. Remove meat and boil down the sauce, roughly 5 minutes.
  8. Serve with yogurt.
