APPLE CAKE WITH SOUFFLÉ CREAM TOPPING

INGREDIENTS

  • Apple layer;
  • 1 lb apples, cubed (I use Pink Lady or Cosmic Crisp)
  • 2 oz sugar
  • 4 tbsp lemon juice
  • Soufflé cream:
  • 3 egg whites
  • 2 oz sugar
  • 12 oz. Plain Greek yogurt
  • 1 oz cornstarch

INSTRUCTIONS

Prepare your favorite apple crust and place it in a 9” springform pan.

Cube the apples (peeling is not essential) and mix with sugar and juice. Cook on medium-low heat for 10 minutes. Arrange in a neat layer on top of the crust.

Whip the whites with sugar until stiff. Add yogurt and cornstarch and beat until smooth. Arrange on top of the apple layer.

OPTIONAL: arrange a layer of cookie crumbs or chopped nuts for extra crunch.

Bake at 325F/170C for 45 minutes. Let cool before slicing.
