CAULIFLOWER WITH BACON, CAPERS AND RAISINS

Excellent side dish for Thanksgiving. No raisins if Liat is making this.

INGREDIENTS

  • 4 slices smokey bacon, cut into 1/4″ strips
  • 2 lbs. cauliflower florets
  • 3/4 cups heavy cream
  • 1/2 cup golden raisins
  • 2 tbsp capers
  • 1 tsp chopped garlic
  • 1 bay leaf
  • 1 tbsp lemon juice

INSTRUCTIONS

Crisp bacon in a heavy 10″ skillet.

Add cauliflower and cook until lightly brown, 5-7 minutes.

Add remaining ingredients and cook over moderately low heat, covered, stirring occasionally, until cauliflower is tender, 12-15 minutes.

Add lemon juice and season to taste.
