INGREDIENTS
- 1 kg beef cubes
- 2 scant tsp salt
- 1 tsp pepper
- 1 tbsp olive oil
- 1 tbsp butter
- 2 onions, chopped
- 3 garlic cloves, minced
- 2 yellow and 2 yes peppers, seeded and chopped
- 2 ripe tomatoes, chopped
- 1 tbsp tomato paste
- 1/4 cup sweet Hungarian paprika
- 1 bay leaf
- 2 cups beef stock
- 4 carrots, peeled and chunked
- 2 potatoes, peeled and chunked
INSTRUCTIONS
- Preheat oven to 350F.
- Brown onion in oil and butter until translucent and golden, 6 minutes. Season beef, then add to onions and cook 3 minutes. It won’t brown. That’s OK.
- Agg garlic, peppers and tomatoes.
- Cook for 3 minutes.
- Add paprika and tomato paste, then add beef stock.
- Bring to a simmer and cook, covered, 1.5 hours.
- Add potato’s and cook another hour.
